- 4 large room-temperature eggs
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted and cooled
- 1 cup plain flour
- 1 teaspoon baking powder

- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whip the eggs until pale and almost triple in volume.
- Gradually add the sugar, mixing until fully dissolved.
- Add the vanilla extract and melted butter, mixing gently.
- Sift together the flour, baking powder, and salt, then fold them into the egg mixture carefully.
- If the batter seems thick, add a splash of milk.
- Pour the batter into a greased pan and smooth the top.
- Bake for 25-30 minutes, or until the cake bounces back when lightly touched.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
