A light and fluffy Vanilla Birthday Cake perfect for celebrating any special occasion with friends and family.
Ingredients

- 280g plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 160g margarine or butter, softened
- 285g caster sugar
- 3 large eggs, room temp
- 2 tsp vanilla extract
- 210ml milk, room temp
- 70g rainbow sprinkles
- 120g unsalted butter, softened
- 240g icing sugar
- 1 tsp vanilla extract (for buttercream)
- 2–3 tbsp milk, room temp (for buttercream)
- Rainbow sprinkles (optional for decoration)
Instructions
- Preheat your oven to 180°C (350°F) and grease and flour your cake tins.
- In a bowl, sift together the plain flour, baking powder, bicarbonate of soda, and salt.
- In a large mixing bowl, beat together the softened margarine or butter and caster sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the sifted dry ingredients to the butter mixture, alternating with the milk, and mix until just combined.
- Gently fold in the rainbow sprinkles.
- Divide the batter evenly between the prepared cake tins and smooth the tops.
- Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center comes out with just a few crumbs attached.
- Allow the cakes to cool in the tins for 10 minutes before transferring them to a wire rack to cool completely.
- For the buttercream icing, beat together the softened unsalted butter and icing sugar until well combined. Add the vanilla extract and milk as needed to achieve a smooth spreading consistency.
- Once the cakes are completely cooled, spread the buttercream icing between the layers and on top of the cake.
- Decorate with additional rainbow sprinkles if desired.
