Description

A light and fluffy Vanilla Birthday Cake perfect for celebrating any special occasion with friends and family.


Ingredients

  • 280g plain flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 160g margarine or butter, softened
  • 285g caster sugar
  • 3 large eggs, room temp
  • 2 tsp vanilla extract
  • 210ml milk, room temp
  • 70g rainbow sprinkles
  • 120g unsalted butter, softened
  • 240g icing sugar
  • 1 tsp vanilla extract (for buttercream)
  • 23 tbsp milk, room temp (for buttercream)
  • Rainbow sprinkles (optional for decoration)

Instructions

  1. Preheat your oven to 180°C (350°F) and grease and flour your cake tins.
  2. In a bowl, sift together the plain flour, baking powder, bicarbonate of soda, and salt.
  3. In a large mixing bowl, beat together the softened margarine or butter and caster sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the sifted dry ingredients to the butter mixture, alternating with the milk, and mix until just combined.
  6. Gently fold in the rainbow sprinkles.
  7. Divide the batter evenly between the prepared cake tins and smooth the tops.
  8. Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center comes out with just a few crumbs attached.
  9. Allow the cakes to cool in the tins for 10 minutes before transferring them to a wire rack to cool completely.
  10. For the buttercream icing, beat together the softened unsalted butter and icing sugar until well combined. Add the vanilla extract and milk as needed to achieve a smooth spreading consistency.
  11. Once the cakes are completely cooled, spread the buttercream icing between the layers and on top of the cake.
  12. Decorate with additional rainbow sprinkles if desired.
