Ingredients

- 1 cup long grain white rice
- 2 tablespoons oil
- 1 onion, chopped
- 2 cloves garlic (optional)
- 8 ounces tomato sauce or crushed tomatoes
- 2 cups chicken broth (or vegetable broth)
- 1 teaspoon cumin
- Salt to taste
- Chili powder (optional)
Instructions
- Heat oil in a pan over medium heat and sauté the rice until golden brown.
- Add chopped onion and garlic, sauté until softened.
- Stir in the tomato sauce and broth.
- Season with cumin, salt, and chili powder.
- Cover the pan and let it simmer for 15-20 minutes until the rice is cooked through.
- Fluff with a fork before serving.
Notes
Spanish rice can be stored in the fridge for 3-4 days or frozen for longer storage. Reheat with a splash of water to prevent drying out.
