Ingredients

  • 1 ½ cups chocolate graham cracker crumbs
  • ½ cup melted butter
  • ¼ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup buttermilk
  • ¼ cup unsweetened cocoa powder
  • 2 tbsp red food coloring
  • 1 tsp distilled white vinegar
  • 1 tsp vanilla extract
  • 1 cup cream cheese frosting

Instructions

  1. Preheat the oven to 325°F. Combine chocolate graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a springform pan to form the crust. Bake for 10 minutes.
  2. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together buttermilk, cocoa powder, vanilla extract, red food coloring, and vinegar. Slowly fold this mixture into the cream cheese mixture.
  4. Pour the filling over the crust and bake for 10 minutes. Reduce temperature to 300°F and continue baking for 1 hour and 15 minutes, or until the center is set.
  5. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 30 minutes to cool slowly.
  6. After that, allow to cool at room temperature for 30 minutes, then refrigerate for at least 8 hours or overnight to set.
  7. Once chilled, spread a thick layer of cream cheese frosting on top before serving.

Notes

Ensure cream cheese, eggs, and buttermilk are at room temperature for best results. Avoid overmixing to prevent cracks.
