- 1 ½ cups chocolate graham cracker crumbs
- ½ cup melted butter
- ¼ cup granulated sugar
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- ½ cup buttermilk
- ¼ cup unsweetened cocoa powder
- 2 tbsp red food coloring
- 1 tsp distilled white vinegar
- 1 tsp vanilla extract
- 1 cup cream cheese frosting
Instructions
- Preheat the oven to 325°F. Combine chocolate graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a springform pan to form the crust. Bake for 10 minutes.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together buttermilk, cocoa powder, vanilla extract, red food coloring, and vinegar. Slowly fold this mixture into the cream cheese mixture.
- Pour the filling over the crust and bake for 10 minutes. Reduce temperature to 300°F and continue baking for 1 hour and 15 minutes, or until the center is set.
- Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 30 minutes to cool slowly.
- After that, allow to cool at room temperature for 30 minutes, then refrigerate for at least 8 hours or overnight to set.
- Once chilled, spread a thick layer of cream cheese frosting on top before serving.
Notes
Ensure cream cheese, eggs, and buttermilk are at room temperature for best results. Avoid overmixing to prevent cracks.
