Instructions
- Preheat the oven to 350°F (175°C).
- Season the roast generously with salt and pepper.
- In a heavy pot, brown the chuck roast on all sides over medium-high heat.
- Add onions, garlic, and carrots to the pot.
- Pour in beef broth and red wine until it covers the roast halfway.
- Cover the pot and braise in the oven for 2-3 hours until the roast is tender.
