Ingredients

- 1/4 cup softened butter
- 1/4 cup powdered sugar
- 1 egg
- 1 tsp vanilla
- 2/3 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon powder
- 1/2 cup grated carrot
- 2 tbsp walnuts (plus extra for topping)
Instructions
- Beat the softened butter and powdered sugar together until fluffy.
- Add in the egg and vanilla. Mix well to combine.
- Sift in the flour, baking powder, and cinnamon powder. Mix until combined.
- Gently fold in the grated carrots and walnuts until well mixed.
- Scoop the mixture into cupcake liners placed in a muffin tray.
- Top each muffin with chopped walnuts for extra crunch.
- Bake in a preheated oven at 160°C (320°F) for 15-20 minutes or until golden.
Notes
For an extra kick of flavor, consider adding a pinch of nutmeg or ginger.
