Description

Delicious and moist muffins made with grated carrots and warm spices, perfect for breakfast or a snack.


Ingredients

  • 1/4 cup softened butter
  • 1/4 cup powdered sugar
  • 1 egg
  • 1 tsp vanilla
  • 2/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon powder
  • 1/2 cup grated carrot
  • 2 tbsp walnuts (plus extra for topping)

Instructions

  1. Beat the softened butter and powdered sugar together until fluffy.
  2. Add in the egg and vanilla. Mix well to combine.
  3. Sift in the flour, baking powder, and cinnamon powder. Mix until combined.
  4. Gently fold in the grated carrots and walnuts until well mixed.
  5. Scoop the mixture into cupcake liners placed in a muffin tray.
  6. Top each muffin with chopped walnuts for extra crunch.
  7. Bake in a preheated oven at 160°C (320°F) for 15-20 minutes or until golden.

Notes

For an extra kick of flavor, consider adding a pinch of nutmeg or ginger.
