Instructions
- In a medium bowl, combine chocolate cookie crumbs and melted butter, mixing until well combined. Press the mixture into the bottom of a 9-inch pie dish.
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth.
- Gently fold in the whipped topping and mint chocolate chips until fully incorporated.
- Spread the cream cheese mixture over the crust in the pie dish.
- Refrigerate for at least 240 minutes or until set.
- Garnish with chocolate shavings or mint leaves if desired before serving.
