- 1/2 pound ground pork
- 1/2 cup breadcrumbs

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon fresh parsley, chopped
- 1 egg
- Salt and pepper to taste
- 8 cups chicken broth
- 2 cups fresh spinach
- 1 cup small pasta (like acini di pepe or ditalini)
- 1 carrot, diced
- 1 celery stalk, diced
- 1 onion, diced
Instructions
- In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, garlic powder, onion powder, parsley, egg, salt, and pepper. Form the mixture into small meatballs.
- In a large pot, bring the chicken broth to a boil. Add the diced onion, carrot, and celery. Cook until the vegetables are tender.
- Add the meatballs to the pot and simmer until they are cooked through, about 10-15 minutes.
- Stir in the pasta and cook until al dente.
- Add fresh spinach and cook for an additional 2-3 minutes until wilted.
