Ingredients

- 2 medium zucchinis
- 2 eggs
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup Parmesan cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- Cooking spray
Instructions
- Cut the zucchini into French fry-sized sticks.
- In one bowl, whisk the eggs.
- In another bowl, mix the breadcrumbs, Parmesan, salt, pepper, and garlic powder.
- Dip each zucchini stick in the egg, then coat in the breadcrumb mixture.
- Place the coated zucchini in the air fryer basket in a single layer and spray with cooking oil.
- Cook at 400°F for 8-10 minutes, flipping halfway through if desired.
- Let cool slightly before serving.
Notes
For gluten-free, use GF breadcrumbs. For dairy-free, omit Parmesan.
