- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheddar cheese
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp garlic powder (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with butter or oil.
- In a bowl, crack the eggs and whisk until light yellow.
- Fold in the cottage cheese and shredded cheddar.
- Add salt, black pepper, and garlic powder if using.
- Pour the mixture into the muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes until the tops don’t jiggle and look inviting.
- Let cool for a few minutes before removing from the tin.
Notes
Use room temperature cottage cheese for the best texture, and feel free to customize with your favorite add-ins like cooked bacon, spinach, or diced tomatoes.
