Ingredients

  • Dried chickpeas
  • Water
  • Salt
  • Baking soda (optional)
  • Garlic cloves (optional)
  • Bay leaf (optional)

Instructions

  1. Rinse dried chickpeas and check for stones.
  2. Soak chickpeas overnight in a large bowl of water or use the quick soak method (boil for 2 minutes, then soak for 1 hour).
  3. After soaking, drain and rinse the beans.
  4. Place the soaked chickpeas in a pot and cover with fresh water.
  5. Bring to a boil, then cover and simmer for 1 to 2 hours until tender.
  6. Add salt towards the end of cooking.
  7. Optionally, add baking soda, garlic, or a bay leaf while cooking for added flavor.
  8. Let beans cool in their cooking water for creaminess.
