- 2 bell peppers, sliced
- 1 onion, sliced

- Juice of 1 lime
- Tortillas, for serving
- Salsa or guacamole, for serving
Instructions
- In a bowl, combine sliced chicken, olive oil, chili powder, cumin, salt, black pepper, and lime juice. Toss to coat.
- Let the mixture marinate for at least 15 minutes.
- In a large skillet, heat over medium-high heat. Add chicken and cook for 5-7 minutes until cooked through.
- Add sliced bell peppers and onion to the skillet, stirring until veggies are slightly charred.
- Serve hot with tortillas and desired toppings like salsa or guacamole.
Notes
You can swap chicken for thighs or use other peppers. Leftovers can be stored in the fridge for up to four days.
