Description

Ingredients

  • 2 large eggplants, sliced
  • Salt
  • Olive oil
  • 2 cups rich tomato sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • Fresh basil leaves
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sprinkle salt on the eggplant slices and let them sit for 30 minutes to draw out moisture. Rinse and pat dry.
  3. Brush eggplant slices with olive oil and bake in the oven until golden brown, about 25 minutes.
  4. In a baking dish, layer eggplant, tomato sauce, mozzarella, and Parmesan. Repeat layers, finishing with cheese on top.
  5. Bake for about 30-40 minutes until bubbly and golden.
  6. Let cool slightly, garnish with fresh basil, and serve.

Notes
