Instructions
- Preheat the oven to 375°F (190°C).
- Sprinkle salt on the eggplant slices and let them sit for 30 minutes to draw out moisture. Rinse and pat dry.
- Brush eggplant slices with olive oil and bake in the oven until golden brown, about 25 minutes.
- In a baking dish, layer eggplant, tomato sauce, mozzarella, and Parmesan. Repeat layers, finishing with cheese on top.
- Bake for about 30-40 minutes until bubbly and golden.
- Let cool slightly, garnish with fresh basil, and serve.
Notes
