- 2 lbs beef chuck roast, cut into bite-sized pieces
- 1 onion, diced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup sour cream
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh rosemary, chopped
- Salt and pepper to taste
- Cooked egg noodles, for serving
Instructions
- Put the beef, onion, mushrooms, and garlic in the slow cooker. Add the beef broth and mix well.
- Include the Worcestershire sauce, Dijon mustard, and fresh rosemary. Season with salt and pepper.
- Cover the slow cooker and cook on low for 7-8 hours, or high for 4-5 hours until beef is tender.
- About 30 minutes before serving, stir in the sour cream and allow it to warm through.
- Serve the stroganoff over cooked egg noodles.
Notes
For the best flavor, use fresh rosemary and a mix of mushrooms. Adjust seasoning to taste.
