Ingredients

  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 onion, diced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh rosemary, chopped
  • Salt and pepper to taste
  • Cooked egg noodles, for serving

Instructions

  1. Put the beef, onion, mushrooms, and garlic in the slow cooker. Add the beef broth and mix well.
  2. Include the Worcestershire sauce, Dijon mustard, and fresh rosemary. Season with salt and pepper.
  3. Cover the slow cooker and cook on low for 7-8 hours, or high for 4-5 hours until beef is tender.
  4. About 30 minutes before serving, stir in the sour cream and allow it to warm through.
  5. Serve the stroganoff over cooked egg noodles.

Notes

For the best flavor, use fresh rosemary and a mix of mushrooms. Adjust seasoning to taste.
