Description

A Mediterranean twist on traditional pasta that combines smoky, creamy tomato oil and tangy yogurt for a bold flavor experience.


Ingredients

  • Pasta (short shape recommended)
  • Turkish yogurt
  • Garlic (lots)
  • Hot pepper flakes
  • Tomato paste
  • Butter
  • Dried mint
  • Fresh parsley (optional)
  • Lemon (optional)

Instructions

  1. Cook the pasta until al dente, reserving a splash of pasta water.
  2. Melt plenty of butter in a pan and stir in garlic, tomato paste, pepper flakes, and dried mint until fragrant.
  3. Add reserved pasta water to the sauce until glossy.
  4. Spread yogurt on the plate, pile pasta and sauce on top, and drizzle with more spiced sauce.
  5. Optional: Garnish with fresh parsley or a squeeze of lemon.

Notes

For a shortcut, use pre-chopped garlic. If Turkish yogurt isn’t available, use plain whole milk yogurt with a pinch of salt and olive oil.
