Description

A light and fluffy low-carb bread perfect for breakfast sandwiches, easy to make with minimal ingredients.


Ingredients

  • 3 large eggs
  • 2 ounces cream cheese
  • 1 teaspoon baking powder
  • Pinch of salt (optional)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Carefully separate the egg whites from the yolks.
  3. Whip the egg whites until stiff peaks form.
  4. In another bowl, blend the egg yolks with the cream cheese and baking powder until smooth.
  5. Gently fold the whipped egg whites into the yolk mixture.
  6. Drop big blobs of the mixture onto a parchment-lined baking sheet.
  7. Bake for 25 minutes until puffed and golden.
  8. Let cool before removing from the parchment paper.

Notes

For a sweeter bread, swap cream cheese for Greek yogurt and add cinnamon. Store leftovers in the fridge and reheat in the toaster.
