A light and fluffy low-carb bread perfect for breakfast sandwiches, easy to make with minimal ingredients.
Ingredients

- 3 large eggs
- 2 ounces cream cheese
- 1 teaspoon baking powder
- Pinch of salt (optional)
Instructions
- Preheat the oven to 300°F (150°C).
- Carefully separate the egg whites from the yolks.
- Whip the egg whites until stiff peaks form.
- In another bowl, blend the egg yolks with the cream cheese and baking powder until smooth.
- Gently fold the whipped egg whites into the yolk mixture.
- Drop big blobs of the mixture onto a parchment-lined baking sheet.
- Bake for 25 minutes until puffed and golden.
- Let cool before removing from the parchment paper.
Notes
For a sweeter bread, swap cream cheese for Greek yogurt and add cinnamon. Store leftovers in the fridge and reheat in the toaster.
