- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Juice of 1 lemon (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels.
- Rub the thighs with olive oil, salt, pepper, garlic powder, and smoked paprika.
- If using, squeeze lemon juice over the chicken.
- Place the chicken thighs on a lined baking sheet.
- Bake for 20-25 minutes, or until cooked through and juices run clear.
- Let rest for a few minutes before serving.
Notes
For added flavor, consider marinating the chicken thighs for an hour or overnight. Serve with garlic mashed potatoes, a fresh salad, or roasted vegetables.
