  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Juice of 1 lemon (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. Rub the thighs with olive oil, salt, pepper, garlic powder, and smoked paprika.
  4. If using, squeeze lemon juice over the chicken.
  5. Place the chicken thighs on a lined baking sheet.
  6. Bake for 20-25 minutes, or until cooked through and juices run clear.
  7. Let rest for a few minutes before serving.
