Description
A delicious apple cinnamon jam made without any added sugar, utilizing the natural sweetness of apples and the warm flavor of cinnamon.

- 4 cups sweet, ripe apples (Fuji, Gala, or Honeycrisp), diced
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/4 cup water
- 2 teaspoons of pectin or 1 tablespoon chia seeds
Instructions
- In a large saucepan, mix diced apples, lemon juice, ground cinnamon, and water.
- Heat over medium heat, stirring occasionally, until boiling.
- Reduce heat to low and cover, simmering for 15-20 minutes until apples are soft.
- Mash the softened apples to your desired texture using a potato masher or immersion blender.
- If using pectin, sprinkle it over the mixture and stir continuously to avoid lumps.
- If using chia seeds, stir them into the mixture and let sit for 5 minutes to thicken.
- Continue to cook on low heat for another 5 minutes until desired thickness is achieved.
- Sterilize jars by boiling for 10 minutes, then fill with hot jam, leaving 1/4 inch headspace at the top.
- Seal jars and optionally process in a boiling water bath for 10 minutes for longer storage.
- Let jars cool undisturbed for 12-24 hours before checking seals and storing.
Notes
Feel free to experiment with spices like nutmeg or ginger for added flavor. This jam also pairs well with various fruits to create unique blends.
