Description

A delightful no-bake dessert made with Lotus biscuits and creamy Biscoff spread, perfect for satisfying your sweet tooth.


Ingredients

  • 200g Lotus biscuits
  • 60g unsalted butter, melted
  • 400g Biscoff spread, melted
  • 115g cream cheese, room temperature
  • 30g unsalted butter, softened
  • 260g icing sugar, sifted
  • 40g Biscoff spread, melted
  • 2 Lotus biscuits, crushed

Instructions

  1. Crush the Lotus biscuits and mix with the melted butter to form the base. Press into the bottom of an 8×8 inch tin.
  2. In a separate bowl, combine the melted Biscoff spread with the cream cheese and softened butter, mixing until smooth.
  3. <li Gradually add the sifted icing sugar, continuing to mix until fully combined.

  4. Pour the cream cheese mixture over the biscuit base and smooth the top.
  5. Drizzle the melted Biscoff spread over the top and sprinkle with the crushed Lotus biscuits.
  6. Place the tin in the fridge for a few hours to set.
  7. Once set, cut into bars and enjoy!

Notes

These pie bars can be stored in the fridge for up to a week in an airtight container, or frozen with parchment paper between layers.
