A delightful no-bake dessert made with Lotus biscuits and creamy Biscoff spread, perfect for satisfying your sweet tooth.
Ingredients

- 200g Lotus biscuits
- 60g unsalted butter, melted
- 400g Biscoff spread, melted
- 115g cream cheese, room temperature
- 30g unsalted butter, softened
- 260g icing sugar, sifted
- 40g Biscoff spread, melted
- 2 Lotus biscuits, crushed
Instructions
- Crush the Lotus biscuits and mix with the melted butter to form the base. Press into the bottom of an 8×8 inch tin.
- In a separate bowl, combine the melted Biscoff spread with the cream cheese and softened butter, mixing until smooth.
- Pour the cream cheese mixture over the biscuit base and smooth the top.
- Drizzle the melted Biscoff spread over the top and sprinkle with the crushed Lotus biscuits.
- Place the tin in the fridge for a few hours to set.
- Once set, cut into bars and enjoy!
<li Gradually add the sifted icing sugar, continuing to mix until fully combined.
Notes
These pie bars can be stored in the fridge for up to a week in an airtight container, or frozen with parchment paper between layers.
